Traditionally, the Nakiri in Japan is the traditional vegetable knife. In German, the term means "leaf cutter," which is quite accurate. It cuts so finely that vegetables can be prepared paper-thin. The Nakiri from the ZWILLING Gourmet series is also designed to peel, divide, or finely slice vegetables of any kind into Julienne strips or Brunoise cubes. With its double-edged ultra-sharp and wide blade, it is also suitable for chopping herbs and even slicing meat or fish millimeter-thin.
