To sharpen the blade, simply pull it diagonally from top to bottom – the V-Edge takes care of the rest. The V-shaped ceramic sharpening rods ensure the entire blade is evenly sharpened without the risk of damage. For European and Japanese knives, there are 2 x 2 interchangeable angle adapters. The adapter not currently in use can be conveniently stored in the base of the V-Edge.
