This is the latest of our K series knives, a classic paring knife with a drop-point blade. Finely ground from heel to tip, it is a great choice for filleting meat, slicing ham and other cutting prep besides. And like a good kitchen knife should, it also cuts vegetables, mushrooms or fine herbs. A soft cutting surface is essential for this knife to protect its sharpness. We recommend our cherry wood cutting boards or the Soft Manaita, just 1 mm thick and capable of making even a hard and unsuitable cutting surface gentle on the blade.
