The LES FORGÉS 1890 chef's knives from Opinel epitomise the high quality of French knife cutlery. It was inspired by the work and personality of two-star chef Jean Sulpice, who runs the Auberge de Père Bise in Talloires, on Lake Annecy.

Forged from X50CrMoV15 stainless steel with a Rockwell hardness of 56-57 HRC, the knives are characterised by their robustness, balance, durability and cutting quality. The handle made of stabilised beech wood with its ergonomic profile pays homage to the traditional Opinel pocket knife and offers remarkable grip and handling properties. Originally from Far Eastern cuisine, the Santoku has now found a permanent place as an all-purpose knife in kitchens all over the world. The blade, which runs all the way to the end of the handle, has numerous scallops that minimise sticking of the food to be cut, making it easier and quicker to work with.
