The LES FORGÉS 1890 chef's knives from Opinel epitomise the high quality of French knife cutlery. It was inspired by the work and personality of two-star chef Jean Sulpice, who runs the Auberge de Père Bise in Talloires, on Lake Annecy.

Forged from X50CrMoV15 stainless steel with a Rockwell hardness of 56-57 HRC, the knives are characterised by their robustness, balance, durability and cutting quality. The handle made of stabilised beech wood with its ergonomic profile pays homage to the traditional Opinel pocket knife and offers remarkable grip and handling properties. The filleting knife, mainly used for filleting fish, can also be used in meat preparation for removing skin or tendons and for cutting thin slices. Like all models in the LES FORGÉS 1890 series, the 18 cm long, flexible blade continues to the end of the handle, providing excellent stability and balance.
