In this case, the stainless steel surface is not drowned out but precisely etched out by a special photo-etching process. As a result, the edges of the cutting surfaces are particularly sharp and the graters cut the ingredients small rather than crushing them crumbly. Originally, this process originated from the manufacture of micro-computer parts and was further developed by Lurch to bring a new dimension of sharpness to their kitchen.
