GRAEF knife sharpeners use diamond dust on the grinding wheels for minimal material removal from the knife. Compared to other sharpeners, the grinding wheels run much slower. This creates less friction on the knife steel and the blade does not burn out.
Diamond wheels. The CX110 with 15° grinding angle uses diamond-coated wheels for both sharpening and honing. It has precise, elastic angle guides for every blade quality. This allows the blade to be sharpened much more accurately and sharper than with comparable devices. The professional elastomer blade guide makes it easy to sharpen knives at the perfect grinding angle without any effort or prior knowledge. Sharpening produces an "arc-shaped grind" for unparalleled sharpness and durability. The 15° grinding angle is ideal for Asian knives.
The knife blade is sharpened in 2 phases: In the sharpening phase with diamond discs, a new cutting edge is built up by slowly rotating diamond discs. In the honing phase, also with diamond discs, the burr created in phase 1 is straightened and thus the sharpness is perfectly restored.
