This cocotte is rooted in the northern Italian tradition of the “paiolo di ghisa,” where dishes like meat and vegetable stews or polenta were cooked in cast iron pots over an open flame. While you can use the BALLARINI cocotte on an open fire, it is more interesting that it is also suitable for all stovetops, including induction.
The combination of several factors ensures ideal cooking results with this induction-friendly cocotte. First, there’s the cast iron, which provides excellent heat conduction and distribution. Thanks to cast iron, dishes become particularly flavorful and develop a rich roasted aroma-perfect for slow cooking. Additionally, the cocotte features a lid with a drop structure. This unique lid design ensures even moisture distribution, resulting in dishes with exceptional flavor and a tender consistency.
